A Little Comfort Food

My mom bought me a cookbook for Christmas, because lets face it, I don't cook very often. I love cooking........ but really don't know any recipes other than cooking chicken, chili, and spaghetti. So it is definitely time to learn some more recipes! Who wants to eat chicken, chili and spaghetti over and over again for the rest of their lives. Not Jon and I, that's for sure. I think we went an entire week without eating chicken, I was so sick of it, just the thought of it made me ill! I guess you just get into a routine of eating the same things because they are so easy to make. And you find different ways to cook chicken or mix it up and make chicken taco's, etc. It's time to spread my wings and branch out there a little.

While my fam was here, my mom made homemade banana bread! Jon LOVES this banana bread, so yesterday we thought we'd just make it ourselves.
This recipe is the easiest recipe, I'm not kidding when I say this. It was so easy that when we were finished Jon said, "So, that's it." Goof! It turned out uber yummy and took literally 15 minutes to prepare.

Oven 350F Bake 55 Minutes

2 Cups all purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda
1/4 teaspoon salt

1/4 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

2 eggs, beaten

1 1/2 cups mashed ripe bananas (we used 3, but it calls for 5)
1 cup sugar

1/2 cup cooking oil or melted butter or margarine

1/4 cup chopped walnuts or pecans


1. Prehead over to 350. Grease bottom of loaf pan. Set aside. In large bowl combine flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.

2. In another bowl combine eggs, banana, sugar and oil/butter/margarine. Add mixture all at ones to the flour mixture. Mix together, can be a little lumpy. Pour into baking pan. Add walnuts to the top. ( We also mixed pecans into the mixture)

3. Bake for 55-60 minutes for a 9x5x3 pan or 40-45 minutes for a 7x3x2 pan or until a toothpick inserted in center comes out clean. If necessary cover with foil the last 15 minutes to prevent overbrowning.

All of the ingredients mixed together

Poured into a baking pan and add pecans to the top

It looks delicious and sounds easy enough. I'll have to give it a try.

I love to cook. I also love cook books. I especially love the kind that have recipes that don't call for ingredients I've never heard of or can't find in our simple little town.

I still want your chili recipe.

I love Cologne :) My recommendations...Of course go to the Cathedral. The treasury is very nice too (in the Cathedral). The chocolate museum is kind of cool - we've done it twice. They have a working factory where you can watch them make chocolate - and they give free samples, so that is fun :) Umm...there is a little train (like a kiddie train) that makes the rounds of all four Christmas markets. It is 5 euro for a round trip ticket - very worth it. You just get on at any of the markets. Oh, and there is a very clean bathroom in the Dom Forum just outside the cathedral!
