Jon and I decided, why wait to eat pumpkin pie on Thanksgiving Day, when you can eat one today? So I gathered all the correct ingredients and put my lack of culinary skills to work on this awesome pie! I think it turned out great thanks to Libby's pumpkin pie recipe; it's nothing short of delicious.

I made a pecan pie the other day and I usually wait until Thanksgiving to make those too.
I have a good, easy recipe for pecan pie if y'all are pecan pie fans. I cheat and buy the crust. I can make it, but...I figure why get flour all over the place when the bought ones are pretty darn good.

I don't like pumpkin pie but that looks delish..lol.
Pecan Pie:
3 eggs (whisked)
1/2 cup white corn syrup (Karo)
1 cup pecans (I usually break them up or chop them slightly)
1 cup sugar
1/4 cup (half a stick) of melted margarine
Mix all of the ingredients together and pour into a pie shell.
Bake at 375 for 35-40 minutes or until filling is slightly firm.
[I always put foil around the outside edge of the crust during the first 30 min. or so and then remove it the last 5 min. For some reason the outside gets much browner, much faster]
That's about all there is to it. It's easy and it's really good.
